The composition of the model systems differed with regard to the gelling agent, either pectin or carrageenan, and to the rigidity of the gel. The effect of salt content on the structure of iota-carrageenan systems: Na-23 DQF NMR and rheological studies

International audience; 23Na NMR spectroscopy has been used to study the effects of Na+ ion concentrations on the structure of 1% (w/w) iota-carrageenan systems, a natural gelling polysaccharide used as a thickener in the food industry. Pea products are underused as a protein source in human food because of their “beany” flavor. The objective of the study is to select an extraction method being the most representative for the sensory perception of the beany flavor. Solid phase microextraction (SPME) and purge and trap (P&T) extracts were analyzed by GC-MS and the sensory representation of the extracts was assessed by direct gas chromatography-olfactometry (D-GC-O). Extracted compounds were less numerous in SPME extracts than in P&T extracts. Nevertheless, the SPME method was more suitable because of its good representation of the pea suspension odor.

Release of isoamyl acetate from starch pastes of various structures : thermodynamic and kinetic parameters

The release of isoamyl acetate from starch-based matrices was studied on the basis of a cumulative dynamic headspace analysis. Two corn starches were compared, which are known to yield pastes and gels differing in their structures and properties. These properties were assessed by viscometry and viscoelastic measurements. Aroma release was discussed as a function of the structure and texture parameters of the matrix. The release curves obtained from water and from the various starch-based matrices at 25 degrees C showed similar patterns but differed in their initial slopes and in the final plateau values. Retention of Carvacrol and Ethyl Acetate in Aqueous Gels of Potato Starch and Konjac Glucomannan

The partition coefficients of two volatile compounds in dispersions containing potato starch (PS) and/or konjac glucomannan (KGM) have been determined by the phase ratio variation method using equilibrium headspace analysis by gas chromatography. The influence of the moment when volatile compounds were added and the effect of the polysaccharide dispersions were investigated. For ethyl acetate, retention by KGM was based on viscosity effect. Retention of carvacrol was important when amylose was accessible. The addition of KGM to PS suspensions decreased the retention governed by interactions with starch.

The way it was prepared led to low solubility and wide particle size distribution. Sensory analysis was used to assess the acceptability and the organoleptic properties of maize-based pan-cakes fortified with this novel protein powder. Flavour release from poly saccharide gels : different approaches for the determination of kinetic parameters

International audience; Two different approaches were developed to quantify aroma release: static headspace syringe injection analysis at different times, and dynamic headspace analysis with trapping on Tenax® for different times. They were applied on two polysaccharide matrices in order to better understand relationships between the structure of the food matrix and flavour perception. These two approaches allowed the determination of kinetic and thermodynamic parameters. Dynamic methods better simulate flavour release in the mouth, but only static measurements allow a determination of thermodynamic and kinetic parameters with a good precision.
