Improving sensory quality of food product to meet the elderly’s preferences: which winning strategy?

Having a "good" diet counts as an important factor for healthy ageing. Beyond nutritional aspects, a "good" diet, also contributes to maintain “eating pleasure”, an essential component in food intake mechanism. The present study aims to assess the impact of changes related to texture, taste and flavor on food acceptance in the elderly. The adopted strategy was to orientate the products modifications based on elderly’s expectations. A qualitative approach (focus group and face-to-face interviews) was carried on with a first elderly panel (>65 yo) to collect suggestions about sensory improvements that can be made in a meat dish with a normal texture, in a meat dish with a modified texture and…

Feeling good! Consumers' associations to feeling good related to food, personal care and home-care products in 14 countries worldwide

International audience; Interest in understanding how consumer goods contribute to perceived wellbeing has increased rapidly in recent years. This study investigates consumers' associations to feeling good (FG), as well as FG related to food, personal care and home-care products. Worldwide consumers from 5 continents, 14 countries and 10 languages (N=9,868, n=588-800 per country) responded to a web-based free word association test in February 2016. To ensure culturally representative answers, only respondents declaring having lived in their country their whole life were selected for the survey. The task started with the elicitation of four words associated to FG. Then, successive sections i…

The nutritional issue in older people with home-delivered meals: a scoping review protocol

Setting up a home-delivered meal service often allows older people suffering from physical and/or cognitive disabilities to stay at home. However, older people who delegate their food activities (food purchasing, cooking…) have been reported to have a worse nutritional status than people who take care themselves of their food activities. In this context, we will conduct a scoping review of all studies related to the nutritional issue in home-delivered meal older recipients. This review was expected i. to shed light on the nutritional status of older people who benefit from home-delivery service to better understand their needs, and ii. to evaluate if home-delivered meal service can be a rel…

Food selectivity and pickiness in adulthood: an age and gender-related behaviour?

Food pickiness –or selectivity- is a behavior which may lead to a lack of variety and an unbalanced diet. While this trait has been studied in children, pickiness in adults has been more rarely explored and only recently in French elderly1. The first aim of the present work was to identify if pickiness varies according to age and gender in adults. The second aim was to examine the link between the selectivity score and self-reported degree of pickiness. Four hundred French adults from 25 to 75 years old answered an online survey. Respondents were asked to tick each food they dislike among a list of 71 food items. The selectivity score was the number of disliked food items1. Moreover, partic…

Proximal versus distal contextual factors: which impact on meal pleasure and food intake in the elderly living in a nursing home?

Poster présenté lors de la conférence; Introduction: Several authors pointed out the importance of meal context on food intake in nursing home. Some authors assessed the impact of context improvement on food intake in nursing home, but they assessed ‘holistic’ strategies by improving physical environment, increasing choice level, changing staff organization… (Abbott et al. 2013). Despite some of these interventions were effective, these strategies are costly and thus difficult to be implemented in nursing home. The aim of the present experiment was to assess the impact of single contextual factors, three proximal factors (food contextual factors) and three distal factors (non-food contextua…

Food behaviour and health patterns in the French elderly population

With an aging population in Europe, understanding why frailty occurs earlier or later depending on individual characteristics is a strong challenge. Few studies have investigated food behavior and the link with nutritional status among French elderly. In Aupalesens survey, we aimed to identify the link between malnutrition and health, sensory, sociological, psychological, food behavior and preferences. 559 women and men older than 65 years old were enrolled. Typical profiles were identified using a double clustering approach aiming to reduce both observations and variables complexity (CDPCA, Vichi & Saporta, 2009). A partition of the 55 multidisciplinary items into four groups was retained,…

Consumer testing in elderly population: impact of age and dependence on liking scoring

In this beginning of XXI° century, there is a total of 600 millions of elderly in the world, and this population should reach 2 milliards in 2050. In such a context, growing interest is devoted to this population, both from an economical and a societal point of view. A key challenge is to promote healthy ageing, a nutritious diet being considered as an important factor to assist elderly in maintaining optimal level of health and preventing the onset of disease or dependency. As ageing is accompanied by physiological and psychological changes, that may alter food perception and preferences. Developing nutritious food likely to meet preferences of older people requests consumer testing with t…

Providing choice and/or variety on vegetables: What impact on food intake?

On the one hand, a choice situation gives an individual a sense of freedom, autonomy and control over the environment, which triggers higher intrinsic motivation and higher satisfaction (Deci and Ryan, 1985). Indeed, it has been demonstrated that a choice situation elicits higher food intake in a meal context (Rohlfs Domínguez et al., 2013; Parizel et al., 2015). On the other hand, providing variety has been demonstrated to enhance food intake. Rolls et al. (1981) argued that providing variety during a meal prevents the onset of specific sensory satiation which refers to the declining satisfaction generated by the monotonous consumption of a certain food. However, in an out-of-home catering…

Impact of a non-consciously perceived odour on subsequent food choices

Poster (1 page) ; http://www.pangborn2013.com/; International audience; Although people were initially considered as entirely conscious of the motivations driving their behaviour and choices, current research in psychology suggests that a significant part of choices and decision-making is influenced by unconscious processes (Bargh, & Chartrand, 1999; Dijksterhuis et al., 2005). To study the unconscious processes involved in food choice, we used the priming paradigm. In a first experiment, we showed that non-consciously perceived fruity odours impacted intentions of food choices (on a menu card), guiding participants toward more fruit and/or vegetable (Gaillet et al., under review).

Culinary processes and food comfortability in an older population Aging is often accompanied by oral impairments, including the loss of teeth and a decline in saliva flow. These changes can lead older people to avoid the consumption of foods that are difficult to chew such as meat. This may consequently increase the risk of sarcopenia (loss of muscle mass, strength and performance) as well as the risk of protein-energy undernutrition in this population. In order to compensate the decline in oral health observed in older individual and to maintain meat consumption, we assessed the impact of four culinary processes (cooking bag, tenderizer, marinade and low-temperature cooking) on the percept…

Texture-aroma interactions in dairy products: Do in-vivo and in-vitro aroma release explain sensory perception?

International audience; The influence of the texture on perceived aroma intensity and on in-vivo and in-vitro aroma release was investigated on three types of dairy products, prepared with different textures. Aroma release depends on in mouth breakdown of the product. The consequences of a textural modification on aroma perception were not the same for the different products. In the case of liquid to semi-liquid products (yogurt and custard dessert), in-vivo aroma release decreased when viscosity increased. For firm gels (model cheeses) in-vivo aroma release was found to increase when cheese hardness increased, but inverse results were obtained in in-vitro conditions. Thus, aroma release co…
